Another tip from The Accidental Hedonist, who points us to Rouxbe. Rouxbe is basically an online cooking school. There are currently almost 200 recipes with full instructional videos (although after your 30 day trial expires, you have to pay for the videos - $99/yr or $199 lifetime).
There are also 100 recipes without videos, and user submitted recipes. Recipes are rated by people who have made them, and often a discussion ensues in the comments section where you’ll pick up some extra tips. Also, there is a full range of cooking school videos, as well as short drill down lessons like: how to pick out olive oil, how to remove a chicken tendon, what is lemongrass, etc.
The first lesson is entitled “Wheat & Gluten”, which actually turned out to be pretty interesting. I now know more about different types of bread than I ever though I would, and sadly, I realized that I’ve been cheating all along with my new breadmaker. I would love the lesson, because the first exercise is to make pancakes. You actually set some aside some of the batter and stir it an extra 2 minutes too long, and compare the results. To my surprise, it made a huge difference in the quality of the breakfast.
This looks like an amazing resource for budding chefs who want to learn all the extra little tips most normal people don’t know about. My next assignment: pizza!
