The semi-depressingly named magazine, Living Without “The magazine for people with allergies and food sensitivities”, gives us this list of unique food substitutions.
Some of the highlights:

Milk: replace with 1 cup water & 1 egg yolk
Yogurt: replace with 1 cup unsweetened applesauce
Egg: 3 tbsp unsweetened applesauce & 1 tsp baking powder.

It has taken me 12 years, but I finally feel as though I am no longer squeamish about the possibility that my food has been spoiled. For whatever reason, most of my life I’ve been lead to believe that, for example, you shouldn’t dare eat food that has been un-refrigerated for several hours.
