If I’m not mistaken, The Leaf is surprisingly the only vegetarian restaurant in Boulder (aside from the vegan fast food VG Burger), but the lack of competition does not stop them from offering stellar food and a fancier-than-you’d-expect dining experience.

If you’ve never heard of the SAME Cafe in Denver, listen up.

There are no prices.
That’s right, no joke. It’s “pay what you can”. The Denver Westwood News has a looooong and detailed article about The SAME Cafe. It’s worth reading. The idea that this business model can work blows my mind a little bit.
